Growing Standards

We’ve selected our farmers for their commitment to quality and the planet. Meticulous in their efforts, our farm families work diligently to maintain superior standards for growing methods suitable to the soils they work. All of our growers have acreage in production that is certified as organic by the USDA.

Certified Organic Standards require farmers to leave the soils in better condition than when production began. In doing so, it’s not uncommon for crop yields to improve over time, allowing the natural balance to return to fallow farmlands.
Integrated Pest Management (IPM) standards rely heavily on pest prevention, utilizing natural means to prevent disease from the outset. Once pests are present, IPM farms use natural methods to control or eliminate crop damage.


We visit farms regularly to ensure they are in compliance with our in-house growing standards, and are keeping current with their nationally recognized monitoring agencies. In doing so, we’re able to forecast trends in the crop year, and encourage expansion into new varieties and markets. We also serve as a sounding board for our growers interested in market trends and developments.Our partnerships with local farmers are the most meaningful and fulfilling part of what we do. Our Team

Chris Hartman
A maverick in developing the local food economy, Chris is currently head of several farm-to-table projects in Rochester, NY. Three Square Kitchen is a direct extension of his efforts to bring us hidden treasures from the small family farm.
Chad Prozeller
Partner in crime to Chris for the better part of two decades, Chad is the muscle that makes the logistics happen. On top of all that, he’s bringing back a hearty paw paw crop, a Native American delicacy. He’s the logistical wizard in our supply chain.
Shannon Prozeller
Shannon spends her days ensuring that every piece of fruit, veggie, or protein is properly labeled and packed before it heads your way. She is our quality controller, standards engineer, and expert selector with an eye for consistency.
